Ingredients

  • ¾ cup roasted garlic hummus
  • (prepare or purchase in advance)
  • ⅓ cup sliced scallions
  • 1 bunch fresh spinach, washed
  • 2-3 teaspoons olive oil
  • 1-2 teaspoons lemon juice
  • ½ teaspoon salt, or to taste
  • ⅓ cup feta cheese
  • ½ tomato, sliced
  • 8-10 Greek olives, sliced
  • ½ seeded cucumber, thinly sliced
  • ¼ medium red onion, thinly sliced
  • 3 whole-grain wraps or tortillas

Preparation

Prepare or purchase roasted garlic hummus and mix in sliced scallions; set aside.

In another bowl, place the cleaned fresh spinach, add the olive oil, and gently massage the spinach for 3–5 minutes. Spinach will break apart and the texture will soften. Mix in the lemon juice and salt and set aside.

Next, spread the hummus onto the wrap to within an inch of the edge. Top with spinach down the center of the wrap; add the cheese, tomato, olives, cucumber, and onion in layers. Feel free to omit or substitute ingredients as desired.

Fold over one side of the wrap to completely cover the filling. Fold in the sides and continue to roll forward until closed. Secure with a toothpick, cut in half, and serve immediately.
